Garlic Mushroom Pasta
8 oz. pasta
12 oz. mushrooms, sliced
4 tbsp. butter, divided
3 garlic cloves, minced
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. grated or shredded Parmesan cheese Parsley optional as a garnish
Cook pasta in large pot according to package directions. Drain, reserving approximately 1/4 cup pasta water.
In large skillet, melt 2 tbsp. butter over med-high heat. Add sliced mushrooms; cook for 4-5 minutes until they have started to turn a golden brown.
Add minced garlic to pan, seasoning with salt and pepper to your taste. Stir constantly, cooking for one additional minute.
Turn heat to low and add remaining 2 tbsp. butter, plus the cooked pasta, reserved pasta water and parmesan cheese. Toss together to evenly coat.
Taste and season if more seasonings are desired.
Note: Mushrooms of any kind will work nicely for this recipe.
